Coravin was designed by a MIT graduate in the US who sought to find a solution when his wife’s pregnancy affected her ability to share a bottle of red with him. Launched in the US last year, it has yet to be introduced to the UK retail market but has been adopted by some the best restaurants in London and its popularity is spreading.
Coravin works by injecting Argon, an inert gas into the bottle before ejecting the wine through a fine, medical grade needle. This prevents any oxidation of the wine which could ruin a wine’s development. Once the device is removed from the cork, the only evidence is a tiny hole in the top of the capsule as the wine reseals itself.
